Dr. Phil and Cake.

Daniel and I don't have cable television. We only have digital antennas that give us about ten local channels, which is really all we need. We've thoroughly enjoyed having the Olympics on every time we turn on the T.V., but I almost always go astray from the Olympics to watch Dr. Phil in the afternoons. I think it's safe to say that I'm not the only one that enjoys watching good ol' Dr. Phil...


We've also been enjoying the beautiful weather, and can't believe that summer is quickly coming to an end!


Lastly, I was born and raised in a family dedicated to "the nectar of the Gods", as my father calls it. My family are devoted fans of the one and only Coca Cola. The love for the delicious drink led me to try a new recipe, Coca Cola Chocolate Cake. I couldn't resist a cake that has a whole can of Coca Cola in it! The cake was a hit, and I think I'll be making it again soon!


Coca Cola Chocolate Cake


Preheat oven to 350 degrees, and grease up a 9 x 13 pan.

Mix:
2 cups flour
2 cups sugar
1/2 tsp salt
1 tsp baking soda
1/2 tsp cinnamon

In a sauce pan over medium high heat, stir these up well until it boils:
1 cup butter
1/4 cup unsweetened cocoa powder
1 cup Coca Cola
1/2 cup buttermilk

Now take off of heat and add that to the flour mixture, whisk until combined.

Then add:
2 eggs
1 tsp vanilla extract

Mix, put in pan, and bake for about 30 minutes.

When the cake is nearly done, make the glaze by mixing in sauce pan:
1/2 cup butter
1/4 cup unsweetened coco powder
1/2 cup Coca Cola

Once that boils, remove and slowly stir in 4 cups of confectioners' sugar until nice and smooth.
Pour glaze over the hot cake fresh from the oven!
